By avoiding mass production and laser cutting machines, we are able to craft and shape each steak and chop by hand through the expertise of our master butchers. Perfect portions are achieved each and every day at our facility with you and your diners in mind. We start with only the best and treat each primal and loin with the utmost respect, ensuring precise portion cuts and industry leading quality.

Packaging & Food Safety

As a fully inspected USDA establishment, we are proud to implement only the highest of standards when it comes to sanitation and operational practices. We have a full HACCP program in place with protocols far exceeding national and local requirements, all to protect you and your guests. Each product is meticulously packaged in our state of the art vacuum packaging machines with various sizes and shapes to fit your unique and ever changing needs.

Wet Aged & Dry Aged Meats

Meat is an art as much as it is a science, and we are always working to better understand and perfect our knowledge base in both of those disciplines. Buying superior quality meat simply is not enough - it is imperative to put the extra time and effort into aging each loin and muscle group to optimize tenderness and flavor. While it’s never easy to maintain such stringent criteria for our cut shop and wholesale programs, it is most certainly worth it. We take great care and effort in aging all of our meats at Miami Purveyors, whether it is our regularly stocked wet aged product or our custom dry aged program. Each loin and muscle is specifically aged based on its natural attributes and customer specifications and parameters.
